What are you trying to achieve?
The installers for windows and Linux are setting the environment to
EB_DEFAULT_PROBE=stlink
but you can add more switches to it if you want. If you need a default lower speed for example you could set it to
EB_DEFAULT_PROBE=stlink,speed=1000
etc.
