I also use the tag_connect for all our projects, it is not cheap but you have a fast debug access for all your devices against almost no additional cost.
I made a small adaptor PCB some years ago, but I would like to have a dedicated Mini-V3 with RJ45.
I personally hate that whole stlink-v3 concept with those piggy boards etc. All kind of open pins and bottom board are asking for accidents on a crowdy workbench. Who came up with that idea never worked on a real project and how messy that can be e.g. in the field.
On that adaptor board is the possibility for a jumper to bypass the Vref.
